How to make pea puree
Pea puree is a delicious, elegant and simple way to dress up any meal, but is especially fabulous when accompanying fish or pork dishes. If you by chance have access to very fresh garden peas, and you’re willing to pick and shell them fresh and use them immediately, then by all means do so. But frozen peas are of such exceptionally high quality, that they’re one of the few ingredients that I’ll just purchase at the store. Peas are like tomatoes for commercial canners – they go from field to freezer or can in such a short time and at the peak of freshness that the packaged product is often of better quality than what you might find in the produce section.. Drizzle in the olive oil slowly until you’ve reached the consistency you like, taste and adjust for salt and pepper. That’s it!For a cooked puree, preheat a small pan over medium heat. With a teaspoon of olive oil, sauté the garlic and shallot for 3-4 minutes, or until beginning to turn translucent and releasing their fragrance. Add the peas, and cook for about five-seven minutes, or until soft. Add the mint and cheese, and remove from the heat. Mix well, taste and adjust for salt and pepper, and if you like the consistency, go ahead and serve it warm.
